Fresh Pineapple and Cherry Overnight Oats

There has been a surplus of pineapple and cherry at my house which definitely makes it feel like SUMMER! Yes, Finally!!! Using fresh fruit to make a batch of overnight oats was the best idea…it’s refreshing, cooling, sweet, satisfying, and delicious. Spooning into these in the morning puts an extra pep in my step! I sound crazy, but you gotta believe me! It takes a few extra minutes to chop up the pineapple, and pit the cherries but it’s soo worth it! If you’re reading this and it ain’t pineapple or cherry season then by all means use canned or frozen! 

Ingredients

  • 1 cup quick cooking oats
  • 2 cups unsweetened non-dairy milk (I used almond milk; vanilla flavored is fine!)
  • 1/2 cup cherries, pitted and chopped
  • 1 cup pineapple chunks
  • vanilla bean simple syrup, to taste (can also use brown sugar or honey + vanilla extract)

Place everything into a bowl, mix well, and refrigerate overnight. Enjoy in the morning for breakfast! You can also swirl in some yogurt, or top with nuts. This recipe is for two servings so I would personally double the recipe so you have enough for a few days 🙂
